It looks like Sir Geoffrey the Fallen create 5 poison gems, then create 5 decaying gems. The decaying gems can override the poison ones.
The usage of create X gems and Y gems appears to be inconsistent. For example Ancestor Brodir appears to create blue and green gems at the same time. While Sir Geoffrey the Fallen and Hollioke create one type, then create the other. Spells that work differently from each other should probably use different wording to make that clear.
