There was a bug with the Xmas Towers that has now been fixed. But you may need to contact support. Nimhain posted about it shortly after reset.

Holiday Tower Issue (Resolved - Please read inside for more information)

Hi Guys, We’ve become aware of an issue where Holiday Tower is not counting towards tower defeated in this week’s invasion. We are currently looking into the issue and hope to have a fix out shortly. In the meantime, if you feel you have missed out a tower due to this issue, please contact our [support]. We will try to resolve this once the Support team is back later this week.
